  • 1-1/2 lbs. (24 oz.) of chicken breast.
  • Diced tomatoes in a 14.4-oz. can with mild green chilies.
  • 15 oz. can of rinsed and drained black beans.
  • 8 oz. of frozen corn.
  • 1/4 cup freshly chopped cilantro.
  • Chicken broth in a 14.4 oz can that is fat-free.
  • 3 chopped scallions.
  • Garlic powder, 1 teaspoon.
  • 1 teaspoon onion powder.
  • 1 teaspoon cumin.
  • Cayenne pepper, 1 teaspoon, to taste.
  • Add salt to taste.


Directions for crock pot chicken recipe


1. Add chicken broth, beans (drained), tomatoes, corn, scallions, cilantro, garlic powder, cayenne pepper, cumin, onion powder, and salt in the crock pot.

2. Season chicken breast with salt and lay on top in the crock pot.

3. Cook on low for 8 - 9 hours or on high for 4 to 5 hours.

4. 30 minutes before serving, remove the chicken and shred.

5. Return chicken to slow cooker and stir in. Adjust seasoning and salt to taste.

6. Serve over rice or tortillas and with your favorite toppings.
